2005- New Year Eve

Today is the last day of year 2005. To celebrate the eve and to welcome 2006, we have another round of feasting, merry making, wine drinking with the family, since it is pot luck I prepared 4 homecook dishes to bring along










Recipe for teriyaki sesame chicken
First , main ingredient..teriyaki sauce ( RM 9+ per bottle...as expensive as the chicken lor)



Ingredients:

1 chicken

1 tsp toasted sesame seeds

Marinade

1/4 cup Teriyaki sauce

1–2 tbsp martell

1 tbsp light soy sauce

1 tbsp tomato sauce

1/2 tsp salt

3 cloves garlic, smashed

1 tbsp grated ginger

1 tbsp sugar

1/4 tsp pepper

2 tbsp honey

Method

Combine the marinade ingredients in a small saucepan. Bring to a boil over medium heat. Stir well until sugar and honey dissolves. Leave to cool completely. Mix chicken with the marinade in a large plastic container. Cover and leave in the refrigerator for at least 4 hours or, preferably, overnight.

Skew chicken and roast it at 180 °C for 40 minutes. Sprinkle cooked chicken with toasted sesame seeds.

Have anybody ever seen this...? i bought this from Cameron Highlands while waiting for the bus in Tanah Rata. Actually i saw a lot of this in and around Brinchang but thinking they were stones, i didnt buy cos too heavy to bring back to Kuching. Only in Tanah Rata when i really have a closer look at it i decided to buy 3 of these,a tortoise. a teddy bear and a snow man. i gave away the other 2 to my friends as souvenirs from Cameron and kept this tortoise for myself. But now i can only show the first 2 stages here.... cos it takes sometimes to actually see and know what it is.. so be patient lar... i will slowly reveal the different stages to you hopefully by CNY.

This is how Mr Macho man has been spending his holidays ...playing maplesea on line with bunch of kids..and he really enjoyed the game , so everyday he will be talking 80% about maplesea and 20% about his beloved plants .

RED ALERT... INTRUDER IN MY BEDROOM

since last night I already heard clik.... clok.... sound in my bedroom but i was just too lazy to wake up and investigate.. thinking that it might be birds doing the clik..clok sound on my window panes... then at around 12 midnight the TV indoor antennae just fell down and again I heard the clik clok sound.
So early this morning the master of the house had to sacrifice his sleep ( he has his PTK exam to sit for at 11 am this morning) woke up and hunted for the intruder with a plastic bag and a broomstick. He called for my help but I am really really afraid of that intruder so i hid in my son#1 room to escape from being attacked. Mission failed.... no intruder found despite of searching every corners and every nooks in my bedroom.
Then I set up a trap in the bedroom , sacrificing half of my home-grown banana to lure the intruder. After 5 hours ... nothing happen despite of me doing an hourly check on the bait.
Around 2pm I meh tahan liao... ask the master of the house to start a second ambush to get the intruder.this time we get all the corners cleared so there will be no hiding place for the intruder..... after some search he found it and with his empty hands yes his empty hands...... he crushed the intruder ... ( a brave man hor)ta...ta................. here is the intruder ... sori hor..actually yuletide season there shud be no killing hor.... but i need to sleep in my bedroom wah.............

sori hor....excuse me hor... i need to go liao to clear the mess in my bedroom and then continues to study for my PTK exam tomorrow...with interludes of ZUMA in between.... why so difficult to pass level 8 (ZUMA, not PTK lar )... can only reach level 8-5 ...alamak

PTK ....oh .....PTK

After all the merry making and feasting on the stuffed christmas chicken,christmas yulelog, wine drinking etc etc.... now I need to bury my head among my books to get myself prepared for my much dreaded PTK exam on 29th Dec as shown on the examination ticket ( sounds like going to movie to watch King Kong).
Examples of things i have to know to sit for this exam:
1. Elaun bantuan gaji drebar ( Under perintah Am A40)..... but we are not entitled to one at all ...so why want us to remember things like those in Kategori 1( basic salary-RM 3872)... can have a driver allowance of RM 250 a month
2. Elaun basikal( perintah Am A9).. which say sth like if you are required by your head of Departmant to ride your bicycle to perform your official duty , you will be given RM 70 a month or 20 sen per km if you use your bicycle for more than 10 days...who the heck use bicycles now... even postmen use motorbikes...
3. Elaun baju panas( perintah Am A27)....RM 600 sekali dalam tempoh 3 tahun...what fat chance they will ever send me overseas...
4. Cuti bersalin anak keenam dan seterusnya ( perintah Am C 54 )... necessary for me to know meh? i have decided to have 2 anak only
5. Cuti pegawai -pegawai penjara ( perintah Am C.. VIII)... why need to know all the extra benefits for pegawai penjara ... i am not one of those neither are my students...
these are just a minute fraction of the things I have to remember in order to tackle the 40 objective Questions to be done in 1 hour. The BIG BIG problem is when I analysed the 4 choices in the questions, there always seems to have 2 or more answers to me to each question.. my result depends...so much on my luck and.... my home made dice lor..
WISH ME LUCK AND HOPE MY DICE SHOWS ME THE CORRECT ANSWER each time I throw it.
Oh ... BTW.. we are only allowed to get 8 mistakes that is we must get 32/40 correct to attain Gred 4 which will be used for salary increment to a higher scale.. mission impossible rite?....

Midnight mass at St Joseph's Cathedral, Kuching

Every year I will try my best to attend midnit mass cos I like the church atmosphere during midnight mass, the wishing and the blessing during Christmas mass. That is the only place on earth that I can feel the real real Christmas mood and peace.The most unique part of our church is at the end of the mass when we were singing " we wish u a merry christmas " and "Feliz Navidad" there will be those bubbles being released from the ceiling high up in the cathedral.. see pics 5..and u can see everybody singing and admiring the bubbles





Stuffed X'mas Chicken

For Xmas eve I made a stuffed x'mas chicken . I opted for chicken instead of turkey cos:
a. turkey is too damn big for a small family like mine
b. turkey is more expensive than chicken
c. turkey is too ang-mohlish
d. turkey meat is not as tender as chicken meat
e. turkey cannot fit into my oven

Recipe for stuffed x'mas chicken

Ingredients

1 chicken, approx. 1.5kg, cleaned and wiped dry
25g butter, melted for basting
Seasoning for chicken (A) combine:
1/2 tsp pepper
1 tsp Chinese five spice powder
1 tsp salt
1 tsp brandy

Filling:

1 tbsp oil
1 tbsp butter
1 tsp chopped garlic
1 tbsp chopped big onions
100g fresh chestnuts, shelled
50g carrot, diced
1 potato, diced
75g button mushrooms, diced
2 slices day-old white bread, crust removed and diced
1 egg, lightly beaten

Seasoning for filling:

1 tbsp light soy sauce
1/4 tsp pepper
1 tsp sugar
Dash of ground black pepper

Glaze for chicken (combine):

1/2 cup water
2 tbsp vinegar
2 tbsp honey

Method
Rub chicken inside and out with combined seasoning (A). Hang the bird in an airy place to dry.
Parboil potatoes and chestnuts until tender. Simmer carrots in boiling water until soft. Drain.
Saute garlic and onions in melted butter and oil till fragrant. Add button mushrooms, cooked chestnuts, potatoes and carrots. Mix in seasoning and stir-fry well. Dish out to cool slightly.
Add breadcrumbs and beaten egg. Mix well.
Stuff filling into cavity of chicken. (Do not pack too much filling or the skin may burst during cooking.) Secure the opening with two or three cocktail sticks or sew up with thick thread.
Bring the combined glaze ingredients to a low boil for five to l0 minutes. Leave aside to cool completely. Brush chicken evenly with cooled glaze mixture.
Place chicken on a roasting tray, breast side down, brush lightly with melted butter and roast in a preheated oven at 190ºC for 30 to 35 minutes.
Remove tray from oven and turn the bird breast side up. Brush with glaze and roast for 10 minutes. Remove tray from oven and brush bird with melted butter and glaze then continue to roast for a further 50 to 60 minutes or until cooked through.


Note
For the last 15 minutes of cooking time, brush chicken frequently with pan drippings. To test if chicken is cooked, pierce a skewer at the thickest part of the bird, the juice will run clear and not pink.

Winter Solstice

Today is Winter Solstice - Tung Chieh .It is the time of the year when we eat glutinous balls cooked in sweet syrup. We used to make the glutinous balls from glutinous flour but nowadays we just buy the ready made type and cooked it in syrup plus pandan leaves .
Steps
1. Boil the syrup + pandan leaves
2. Put in the glutinous balls
3. Cook till the Glutinous balls float on the syrup.

After the temple we went back to Palm Leaf Cafe for our lunch before we say goodbye to Cameron Highlands. Another round of strawberry thingie, and this time .. strawberry icecream.. real nice and yummy.
